I’ve seen some pretty wild videos going around the internet lately of people making their own breakfast cereal, but I have to say – this is not like that! Making homemade granola is way easier and less time-consuming than, say, making homemade Cocoa Puffs or Rice Krispies. I promise! And not only is it easy to make, it tastes way better than store-bought granola. Best of all, it’s easy to customize to whatever you like (or whatever you have on hand). You can use pretty much any kind of dried fruit or nuts, and swap out different sweeteners (honey, brown sugar, maple syrup) to get the taste you want. This maple pecan granola is a great basic recipe that you can customize to your heart’s content. But even as is, it’s totally fantastic!

One caveat for this granola is that you do need to use real maple syrup, not maple flavored pancake syrup. It can be a little expensive (and I actually prefer the fake stuff on pancakes, believe it or not!) but it’s definitely worth it! I like the Costco brand maple syrup and the price is pretty reasonable, especially considering how often I use it for making my favorite easy oatmeal for breakfast. As I said above, you can definitely substitute honey or brown sugar instead, and adjust the amount of sweetness to your preference. This maple pecan granola has become a breakfast staple at our house, and we all love it!

Maple Pecan Granola

Ingredients
- 4 cups old fashioned oats
- 1 cup pecan halves
- 1 cup shredded coconut
- 2 teaspoons ground cinnamon
- 1/4 teaspoon nutmeg
- 1/2 teaspoon salt
- 3/4 cup real maple syrup
- 3/4 cup canola oil
- 1/2 cup brown sugar
- 1 teaspoon vanilla
- 3 large egg whites
Instructions
- Preheat the oven to 325 and line two baking sheets with parchment. In a large bowl, mix together the oats, pecans, coconut, cinnamon, nutmeg, and salt. In a small bowl or measuring cup, whisk together the maple syrup, oil, brown sugar, vanilla, and egg whites.
- Pour the wet ingredients into the dry ingredients, and mix well to combine. Divide the granola mixture between the two prepared pans, and spread in an even layer.
- Bake the granola for 40-45 minutes, stirring every 15 minutes. Let cool completely before storing in an airtight container.
