I first published this recipe for one hour rolls almost nine years ago, and they have consistently been one of the top three most popular recipes on my site. And for good reason! They are truly some of the best rolls I’ve ever made. I go through periods where I make them all the time, and then other periods where I kind of forget about them and don’t make them for a while. Every time I rediscover them, I am amazed all over again at how good they are! They kind of defy expectations. How can they be so soft and fluffy, but only take an hour to make? How can they be so delicious, but also so easy?

Since I’m currently in another one of those love affairs with these rolls, I thought they could do with some updated pictures. I used to make smaller rolls and fit twenty of them in the pan, but these days I usually make twelve large rolls. Feel free to divide the dough however you like! The larger rolls are perfect for making sandwiches (especially with leftover pot roast – yum!) but the smaller rolls are great if you have a lot of people to feed.

Since these rolls are so popular, I’ve gotten LOTS of comments about them, and feelings are a little mixed about the sea salt on top. I love it and always add it, but it’s definitely optional. In general, everyone loves these rolls, and they are nearly foolproof. If you’re having trouble getting the rolls to rise, you’ll want to check your yeast. Older yeast doesn’t rise as well (if at all) and might cause your rolls to stay hard and small. I keep my yeast in the fridge to help it stay fresh. If you haven’t tried them yet, these rolls are a must-make!

Soft and Fluffy One Hour Rolls
Course Bread
Prep Time 10 minutes Cook Time 15 minutes Rise Time 35 minutes Total Time 1 hour
Servings 12
Ingredients
- 1 1/2 cups warm water
- 1 tablespoon active dry yeast
- 2 tablespoons sugar
- 2 tablespoons butter softened
- 1 teaspoon salt
- 4 cups flour more or less as needed
- 3 tablespoons melted butter for brushing on top
- coarse sea salt for sprinkling on top
Instructions
- In a large bowl or the bowl of a stand mixer, dissolve the yeast and sugar in the warm water and let stand for five minutes, or until foamy. Add the butter, salt, and 3 cups of flour, and mix until combined. Add additional flour, 1/4 cup at a time, until the dough pulls away from the sides of the bowl and is only slightly sticky to the touch (be careful not to add too much flour!). Knead 3-5 minutes, until smooth. Cover and let rise 20 minutes.
- Preheat the oven to 400 and line a 9 x 13 pan with parchment paper or spray with cooking spray. Gently punch the dough down and divide into 12 equal sized pieces. Roll each piece into a ball and space evenly in the prepared pan. Brush with melted butter, sprinkle with sea salt, and let rise for an additional 15-20 minutes. Bake 13-15 minutes, or until golden brown. Remove and brush with butter. Let cool slightly before serving and enjoy!
