I will admit it took me a while to appreciate cauliflower. When I was a kid, I had some mushy, gross steamed cauliflower at a friend’s house, and it put me off cauliflower for a long time. And then somehow in my adult years, I’ve started to really love it! It’s so versatile and delicious (both raw and cooked) and it’s part of some of my favorite recipes. This simple roasted cauliflower is one of my favorite ways to prepare it. It’s super easy to make, with only a few minutes of hands on time, and my whole family loves it! Even my kids, who don’t generally love curry flavor, love it on this cauliflower. It’s an easy and nutritious side dish that’s always a favorite!

This cauliflower is seriously so good that I will happily eat it as a snack. Roasted vegetables in general are totally my jam, but cauliflower is definitely one of my favorites. It’s both crisp and tender, and has such a nice mellow flavor. It’s the perfect side dish with chicken or fish, and it’s also delicious tossed into a salad. It is a staple at my house, and I think you’ll love it as much as we do!

Simple Roasted Cauliflower

Prep Time 5 minutes Cook Time 25 minutes Total Time 30 minutes
Servings 6
Ingredients
- 1 head cauliflower
- 1 tablespoon olive oil
- 1 teaspoon curry powder more or less to taste
- 1 teaspoon garlic salt
- 1/2 teaspoon pepper
Instructions
- Preheat the oven to 425. Break the head of cauliflower into bite sized pieces and place on a rimmed baking sheet. Pour the olive oil over the top and toss to coat all of the cauliflower. Sprinkle the curry powder, garlic salt, and pepper evenly over the cauliflower pieces. Bake 25 minutes and serve hot.
